Charles likes Gin Tea-ni

Named for Prime Minister Charles Grey, the strong floral and citrus flavors of Earl Grey tea balance nicely with gin in one of my (and I'll assume his) favorite summer cocktails ... Cheers!

Ingredients:

  • 1.5 oz Earl Grey tea concentrate

  • 0.5 oz fresh-squeezed lemon juice

  • 0.6-0.75 oz honey syrup (50:50 blend of honey:water); or 0.5 oz simple syrup

  • 2 oz gin

Instructions:

  • Add all ingredients in a shaker with ice

  • Shake and pour into glass

  • Garnish with a thinly sliced lemon wheel and a fresh lavender sprig

Earl Grey tea concentrate:

  • Bring water to a boil and bring off the heat

  • Let stand for 1 min

  • Pour 1 cup of just boiled water over 2 rounded tablespoons of loose earl grey tea

  • Steep for 1 hour

  • Filter out tea leaves

  • Store tea in the refrigerator for up to 1 week
